Cauliflower Mash (Also known as Mashed Potatoes)



I do love a nice tasty serving of mashed potatoes... but this, my friends, takes the award for best side dish! A lot of restaurants have started serving cauliflower mash as a mashed potato substitute, and patrons are taking to it well.  They have a wonderful flavor profile and hold a similar consistency, so why not?!  I would recommend serving them with chicken, pork or seafood.  Under some grilled Rockfish would probably be my favorite. Enjoy!

Cauliflower Mash:

1 head of Cauliflower

1/4 cup of Milk

2 tablespoons of Butter

Garlic Salt and Pepper to taste

Break the cauliflower head into small, bite-size pieces.  Place all of the cauliflower pieces in a sauce pan filled with water and boil until they are tender.


Remove carefully from the sauce pan and drain out all of the water (usually best done in a colander).

Empty the contents of the bowl into a blender or food processor and blend until the mixture has a consistency of mashed potatoes (usually for a minute or two). Add the milk and butter ingredients in between blends.

Once you are finished, add garlic salt and pepper to taste.  I sometimes tend to add a little extra butter as well.  Do not be shy with that garlic salt and pepper either! :)

Enjoy with some yummy chicken, pork, or seafood!
