Not Your Mother's Meatloaf

1 pound of Ground Beef
1 Egg (beaten)
1 packet Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
1/3 cup dry bread crumbs
½ Yellow Onion (chopped)
1-2 stalks of Celery (chopped)

1/3 cup of ketchup
2 tablespoons of Brown Sugar
3 tablespoons of Apple Cider Vinegar

The ranch packet is back at it again. I told you, it is good in EVERYTHING. Yes, I said it… everything. This meatloaf recipe is super simple – especially if you are a newbie to this whole meatloaf thing, like I was.

Meatloaf can be a touchy subject for some. Maybe there is a recipe that has been in the family for years or you like it a super particular way. This meatloaf recipe mixes the flavor of good ol’ fashioned meatloaf with the added flavor from the ranch seasoning mix and hint of sweetness from the brown sugar. It isn't too sweet or salty, and it definitely isn't boring.

Another way you can make this recipe your own is to play up the flavors of the meat you use. Whether you want to spice up the flavor with some sausage or cut down on the fat with some turkey – it’s all you! This will definitely be one of those recipes you re-do over and over.

Preheat the oven to 350 degrees.

Sauté your onion and celery ingredients (chopped) in some olive oil or butter until cooked through. While you are waiting for the oven to preheat, mix all of your meatloaf ingredients together. To be sure the meatloaf is moist, do not over mix the ingredients. Form the ingredients into three small loafs and place on a tinfoil covered baking pan.

In a separate bowl, combine your sauce ingredients and stir. Spoon the mixture on the top and sides of the three small loafs.

Bake uncovered for 45 minutes to an hour or until cooked through. Remove from oven when finished and let stand for 5 minutes. Time to serve!

  1. There are few things in life I love more than meatloaf. The ranch packet should take it to crazy new levels - like Alpha Centauri...dang...holy smokes!
