A Working Girl's Corned Beef Cabbage


With St. Patty's Day right around the corner I thought I would get in the spirit! My mom used to make us this dish every year and it's time I carry on the tradition. However, I naturally put a small spin on this long-time favorite (simplicity).

There is nothing better than coming home from a long day of work to dinner ready, smelling amazing, prepped and ready to go! Ladies and gentleman... Welcome to the world of crock-pots. Not only does this meal cook while you are away for the day but Trader Joe's also makes the prep work easy for you too! Man this one is a winner.

A Working Girl's Corned Beef Cabbage
1 Trader Joe's Marinated Uncured Corned Beef (seasonal)
1 package Trader Joe's Teeny Tiny Yellow Potatoes
1 head Trader Joe's Yellow Cabbage
1 Yellow Onion
1 bag of Baby Carrots
1/4 cup of Water
3 tablespoons of White Vinegar

Drop your Trader Joe's Corned Beef into your crock-pot. Cut your veggies into large bite size pieces and drop them on top of your Corned Beef. Pour both the water and vinegar on top of the whole mixture. Set the crock-pot to low. Let it cook for atleast 8 hours. I have let it cook for as long as 12 on low and it has been delicious!

  1. Now you're speaking my language...I'm speechless. Your last 3 posts have been nothing short of atmospheric! Those pics are gorgeous and enhance my desire for that plate...there are not too many things quite like corned beef. And I know this is Irish-inspired, but we Poles love us some cabbage as well.
